Beets (Beta vulgaris) can be planted roughly April to August in the Duluth area. Sow in a two-to-four-inch wide band about 15 seeds per foot, 1/2 inch deep, rows 12-to-18 inches apart. Thinning is not necessary. For a continuous supply of greens and small tender beets, sow seed at two- week intervals. You can enjoy beets from your garden, or farmer, well into the winter by storing at about 32 F and high humidity.

Harvest beets when they are two-to-three inches in diameter. Greens should bright dark green and healthy. Avoid beets with bruises, soft and moist spots, and ones that are light weight for their size. Large beets may become woody inside.
