De-Mystifying Pressure Canning (Salsa)
In this hands-on class two Master Food Preservers will take participants through the process of pressure canning salsa. Participants will learn everything they need to know to feel confident in their ability to safely use a pressure canner to preserve the harvest. An expert gardener and salsa maker will lend her recipes and expertise in making salsa for canning. Samples will be provided!

In this series, learn how to make “slow food” with your fresh garden produce, that you can then preserve and use as high quality “fast food” after the garden season is over. This three-part series will demonstrate food preservation practices that ensure safety and maintain the nutritional quality of the food. The series includes a class on freezing and canning soups and sauces, techniques and strategies for freezing and dehydrating your favorite vegetables, as well as preserving herbs through dehydration and freezing pestos. All classes will be hands on and samples will be provided. Sign up for one class or the whole series. Receive a $15 discount if you sign up for the entire series.

A Master Food Preserver will instruct participants in the technique for water bath canning jam, applesauce, and chutney. Participants will assist in the canning preparation and processing. Samples will be provided and participants will receive one item to take home.

Learn to use a dehydrator to preserve fruit by making fruit leather. In this hands-on class, students will be instructed in how to process various fruits into sauce, and then turn them into fruit leather in a dehydrator. Samples will be provided.

Gerald Sundberg, long-time, experienced fruit grower will instruct participants in what to do in the fall to ensure an abundant and healthy fruit harvest for the coming season. Learn about maintenance and propagation of strawberries, raspberries, rhubarb, and grapes.

Two avid gardeners and adventurous fermenters will discuss the science and nutritional benefits of fermenting. Participants will get to sample various fermented foods and will be taken through the process of preparing cabbage to make their own batch of sauerkraut.
